In honor of Cinco de Mayo, here’s a picture of my one-of-a-kind Dia de los Muertos Moses action figure I keep at work. Wrong holiday, I know, not to mention a day late, but whatever. Close enough.

To celebrate we made veggie tacos with mango salsa for dinner. I wanted to make margaritas but realized we didn’t have any of the ingredients we’d need and I didn’t feel like going shopping, so we settled for vodka tonics, heavy on the lime.


Mmmm ….. veggie tacos with mango salsa. That sounds good. What did you guys use for a filling? Do you have any good recipes that you could pass along? When we do Mexicann at home, we sometimes do tacos of garlicky greens, roasted poblanos with potato rajas, or an herby ricotta mixture. We got those recipes out of Kevin’s cookbook by Rick Bayless. I can’t think of the title of the actual cookbook at the moment though.

Now you’ve got me thinking that we might have to do some Mexican food for dinner tonight. We haven’t done that for a few weeks now. Although with all of the roasting that some of the recipes call for that might be a little tricky if the weather heats up again.
